Peanut Butter Goodness

I have a thing for peanut butter. I seriously think I could eat it all the time. So I just had to share this recipe for a SIMPLE and QUICK peanut butter protein shake.

Peanut Butter Protein Shake


1 Cup Almond Milk

2 Tbsp PB2

2 Tbs. sugar-free, fat free instant chocolate pudding

1/2 tsp Hershey’s cocoa

1/2 tsp vanilla

1 Scoop of desired protein powder 


Now…………….we create!!

1. Put all ingredients in a blender and mix.

2. Add ice and blend on high.

3. The more ice you add the thicker it becomes.

4. Pour and enjoy!


    • ** If your at work and don’t have a blender, you could combine all the ingredients in a blender bottle less the ice. I won’t be as thick but it’ll still get the job done.

Protein is important for building muscles and repairing them. Carbohydrates are used for energy but protein helps keep us full. A protein shake is  an easy and effective way to take in protein. Also  protein shakes are great way to refuel worn muscles post workout.

I like to have  a protein shake to start the day, it tends to keep me satisfied longer.

Chocolate Cake In A Mug

I must confess…. I love to bake on Sunday afternoons. Maybe it’s  the slowness that goes on around here but I love to whip up something on Sunday afternoons. It could be dinner or it may be cookies or cakes. It’s just whatever floats my boat! Today it’s cake in a mug.

So, today I was craving chocolate. I mean REALLY craving it. And you see, I am counting calories via My Fitness Pal and trying to be mindful of how much goes in. So with that, I remembered Hungry Girl’s Cake In A Mug recipe. Super easy (my favorite) and it’s light and chocolate!

Here’s the recipe:

2 tablespoons moist style devil’s food cake
1 tablespoon fat free liquid egg substitute (Egg Beaters)
1 tablespoon fat free cream
1/2 teaspoon of baking powder

In a microwave-safe mug, big coffee mug, or bowl, spray with non-stick spray (PAM), combine the liquid egg, sour cream and baking powder, mix. Add 2 tablespoons of water and mix until uniform.

Microwave for 1 min and 45 secs, or until set.

Run a knife along the edges to separate the cake. Place mug over a plate and flip so the plate is right side up. You want the mug to sit on the plate, you might have to run the knife over the edge again.k completely, at least 15 minutes.

Let the cake cool completely, at least 15 minutes.


You can use anything and I urge you to check out her cookbooks and website for more formal recipes.  Personally, I like………

1 teaspoon of sugar free caramel

1 teaspoon of chopped peanuts

Half a banana chopped up

Possibilities are endless and you  can even use moist yellow cake.  It’s just a fast easy dessert for one with roughly under 200 calories.

BB’s Quick And Easy Salsa Recipe

I need summer in my life!  Seriously. I need warm temperatures, sand between  my toes and the smell of sunblock clouding my judgement as I sip on fruity or not so fruity libations. (They can be lite libations, don’t judge!)

Anyways, with all that being said, I made salsa today. I needed something that reminded of the fresh veggies soon to be in my  house.  I thought I would share this super easy salsa recipe.



2 (14.5 oz) cans of diced fire roasted tomatoes

3 garlic cloves

2 (4 oz.) cans of diced green  chiles

1 small lime

1 jalapeno

Fresh cilantro (the more the better for me)

1 tablespoon black pepper

1 tablespoon oregano

1 tablespoon cumin


Chop up  the cloves of garlic, not too much, let the blender do most of the work. Just a couple of chops to make smaller pieces. In the blender pour one can of the diced fire roasted tomatoes and drop in the chopped garlic cloves. Blend for a few second. Garlic should be blended in with the tomatoes.

Take your lime and cut away the rime.  Slice lime in fourths and throw the lime into the blender. Also throw in the your cilantro. Cut up your jalapeno and throw in as well.  Don’t worry, the blender will take care of all the chopping.  In a bowl combine second can of tomatoes, the 2 cans of chiles,  and the rest of the ingredients. Stir to mix in the dry ingredients. Pour on into the blender with the rest of the ingredients and blend till cilantro and lime are pureed.

Pair with veggies or chips for a delicious snack!



Easy Cake Recipe

Found this and thought I should share!  Sounds yummy!

Genius! —– 1-2-3 Cake. I love this idea!!!
You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big bowl). Then simply store the mixture in an airtight container until you get the urge for dessert. Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now without making an entire cake!!!

Simple Crab Bisque

1 can of cream of chicken
1 can of cream of asparagus
1 can of tiny shrimp ( This is optional but I like them so, in they went!)
1 can of crab
1/2 cup of skim milk
1/4 cup of half and half
2 cap fulls of sherry
salt and pepper to taste

Mix together, heat and serve.

Putting my recipe into MyFitnessPal said that one serving,  160 grams according to my calculations (yes i weighed it all as i was pouring it in) is 146 calories per serving.

Easy Peasy Homemade Hummus Recipe

I love, LOVE hummus!  I can eat it on veggies, crackers, in salads. I love it. However, I hate the price of it.

Well I came across a recipe and of course made it mine.


  • 1 large can of chickpeas  
  • 2 cloves of garlic
  • 2 teaspoon of lemon juice
  • 1/4 teaspoon of onion powder
  • 1/2 teaspoon salt
  • 1/2 cup water (1/4 cup at a time)
  • pepper 
  • olive oil to taste ( I did about a tablespoon)
  • I used spicy seasoning to taste to give it a little extra flavor.
Drain can of chickpeas  Rinse well. Pour the first five ingredients into blender. Add first 1/4 cup of water and start blending. After a bit, stop the blender,  scrap sides and add second 1/4 cup of water and continue to blend.  Once I poured into the bowl,  I added a bit of olive oil, pepper and lightly seasoned with a spicy seasoning to taste. Refrigerate and enjoy!!  
Calories I would guesstimate to be about 110 calories for 1/2 cup. 1 serving of regular un-pureed chickpeas is 1/2 cup serving with 110 calories.  So I’m sticking close to that to be on the safe side. There’s not a ton of additives to it to up the calorie intake. 
My presentation could have been better but the taste is still there.
